Razor clams are narrow, elongate clams named for their long, convex shape resembling an old-fashioned barber's straight-edged razor. Razor Clams have a firm texture, mild brininess and a mild clam flavor.
Sweet and tender razor clams must be cooked fast; if overcooked, they become tough. The preferred way of cooking Razor Clams is to pan-fry them, but they can also be diced/ground to use in chowders and fritters.
